- I like casseroles because you just throw all the ingredients
in a bowl - it doesn't have to "look nice" - with this
recipe though you can add some noodles on top.
- Ingredients
- 1 can cream of mushroom soup
- 1/4 cup water ,
- 3 oz. chow mein noodles in the can
- 1 can tuna
- 1 cup salted cashew nuts
- 1/4 cup chopped onions

- Mix up the soup and water and add all the other ingredients,
but save a few of the noodles for garnishing the top. Put in
a baking dish you've buttered first. Put the garnishing noodles
on top and bake without a cover at 375 degrees for 20 or 30 minutes.
Temperature: 375° Baking Time: 20-30 minutes.

Chicken Pot Pie Casserole
- This is an outstanding recipe that can use
beef, chicken or pork. I have chose chicken, only because I really
really, really enjoy it in this dish.
- This is the easiest casserole and the topping
replaces the need to even have buns.

- 2 TSP MARGARINE
- ½ CUP ONION
- 10 OZ CREAM OF MUSHROOM SOUP
- ½ CUP SKIM MILK
- 1 ¼ CUP CHOPPED COOKED CHICKEN
- 1 CUP CUBED COOKED POTATO
- 1 CUP CUT COOKED CARROT
- 1/8 TSP THYME
- TOPPING
- 1 CUP FLOUR
- 2 TSP B. POWDER
- ¼ TSP SALT
- 2 TBSP MARGARINE
- 6 TBSP MILK
- HEAT MARGARINE IN FRYING PAN. ADD ONION AND
SAUTE UNTIL SOFT BUT NOT BROWN. STIR IN NEXT 6 INGREDIENTS. KEEP
HOT. MAKE THE DOUGH TOPPING BY PLACING DRY INGREDIENTS IN BOWL,
CUTTING IN MARGARINE AND ADDING MILK. STIR TO FORM SOFT BALL.
PLACE CHICKEN MIXTURE IN 2-QUART CASSEROLE. ROLL DOUGH MAKING
IT SLIGHTLY LARGER THAN THE CASSEROLE. PLACE ON TOP, PRESSING
AROUNG SIDES. PRICK THROUGH TOP WITH FORK SEVERAL TIMES. BAKE
IN 425-DEGREE OVEN FOR 20 MINUTES OR UNTIL TOP IS RAISED AND
BROWN.

- Broccoli Cheese Rice Casserole
- From my mom's recipe file:
- 2 - 10 oz boxes of chopped broccoli
2 c uncooked minute rice
2 cans cream of chicken soup (or onion works well too)
1 c milk
1 16oz jar of CheezWhiz
1 T salt
1/2 t pepper
1/2 c chopped onion
2 small cans of sliced water chestnuts
- In a 3 qt casserole combine rice, soup, milk, cheese, salt
and pepper. Microwave on high for 2-4 minutes, until cheese
melts and can be blended easily. Add onions and water
chestnuts. Devide evenly between 2 lightly greased
microwaveable dishes* and add 1 box of broccoli to each
dish. One dish at a time, microwave on high 12-14 minutes,
rotating dish 1/2 a turn after 5 minutes. Let stand 5
minutes before serving.
- * If you are only cooking for one or two and don't like
eating the same leftovers for 2 weeks, you can freeze one of
the dishes. When cooking from the frozen state, microwave
on high 18-21 minutes.
