Bacon and Cheddar Quiche
INGREDIENTS
1/2 pound of bacon (cooked to your particular liking)
<I tend to find that the stuff from the butchers is SO much better than the packages>
1/2 pound shredded cheddar (I mix sharp and mild together -- or occasionally use a bit of harvarti as well)
3 large eggs
2 cups of light cream or whole milk ( I actually use what is called half and half here. Not quite cream and not quite milk - if you use milk be prepared for your quiche to be a little more "watery")
Optional seasonings to your liking <I use chives and a celery/onion powder mix that I have put together myself to avoid the "salts")
1 10" deep dish pie shell (I buy the frozen ones without the tops. Cheap and easy -- they are great)
INSTRUCTIONS
Preheat the oven for 400 degrees
Place bacon and cheese in the bottom of the unbaked pie shell .
In a separate bowl, beat egs and mild and seasonings until well blended. Pour the mixture carefully into the pie shell and place in the center of the rack in the oven.
Bake for approximately 40-45 minutes.
Cool and store in freezer, or serve immediately.
HINT: The best way to know when an egg dish like quiche is done is to use a toothpick and poke into the centre. If it comes out clean -- it is ready. If it comes out with little pieces on it, cook for 5 more minutes and check again. Also watch at about 35minutes for the top to be browning. I dont like it too brown, so I often only cook it to about 40 minutes)
This recipe freezes really well. I can get 6-8 pieces and they work great for a quick breakie or lunch in the microwave. Just pop it in and cook it (watch it of course) for about 2 minutes.
