Stir Fry in Sweet and Sour Sauce
Stir Fry in Sweet and Sour Sauce
This is a good one and you can use that food that flies or you can use
it with pork which I prefer:
1 lb chicken or pork cut into about one inch pieces (chicken skinned
and boneless or pork trimmed of fat)
1 tablespoon soy sauce
1 tablespoon wine
1 medium red onion, cut in half and then sliced lengthwise into thin
strips
1 can (20oz) of pineapple chunks drained, but save the juice
3 medium green onions thinly sliced
1 tablespoon minced garlic
1 tablespoon minced fresh ginger root
3 teaspoons olive oil (or canola oil)
2 to 3 cups of hot cooked rice
Sauce:
1 tablespoon corn starch
4 tablespoons red wine vinegar
2 1/2 tablespoons sugar
2 tablespoons tomato sauce or ketchup
the juice from the pineapple
1/4 teaspoon salt
Combine meat, 1 tablespoon soy sauce and 1 tablespoon wine in a bowl,
stir until meat is coated and let sit for 15 min.
While the meat is marinating, prepare the other ingredients. Cut onion into strips, drain pineapple, reserving juice, combine garlic, ginger and green onion in a small bowl and set aside.
Prepare the sauce by putting cornstarch in a bowl and stirring in
2 tablespoons vinegar to dissolve. Then add remaining vinegar, sugar, tomato sauce or ketchup, juice and salt and set aside.
Set a large (10 to 12 inch) non-stick skillet over medium high heat. Add 2 tablespoons of the oil. When pan is hot, add meat and stir fry until almost cooked through. ( I just cook it till it's done) Remove meat from the pan.
Pour the remaining teaspoon oil into the pan and add onion strips and pineapple and stir-fry about 3 minutes or until lightly browned.
Add green onion, ginger and garlic mixture into the pan, stir one minute, add sauce mixture and bring to a boil to thicken. Turn heat to medium, add meat, including any juices that have gathered around it, and cook, stirring, about 2 minutes or until everything is coated with the sauce and the meat is cooked through. Serve over rice.
Serves 4 at 399 calories per serving, 55 grams carbohydrate, 30 grams protein and 5 grams of fat.
