Seasoning Mixes.

I have always tried to not use salt in my cooking, and during much trial and error, I developed the following "blends" that at Christmas time now, I put in little jars for gifts for people.

You have to use dried seasonings if you want to store it, but if you are just going to use it right away -- oohhh aahh they are incredible with fresh ingredients...these also work FABULOUSLY for dips where you can add them to low fat yogurt for veggies and chips, and for salad dressings with oil and vinegar to your liking. My personal favorite is raspberry vinegar for salads and these mixes. As well, you can use these same combinations to make excellent seasonings for soups made from BEEF or CHICKEN or HAM.....


FOR FISH
Combine the following ingredients

2 tablespoons of parsley flakes
1 tablespoon dried grated lemon rind
1 tablespoon celery see
1 table sppon savory
1 tablespoon thyme
1 tablespoon marjoram
1 teaspoon drived chives
1 bay leaf - crushed

Makes 1/3 cup.


FOR POULTRY
Combine the following ingredients

2 tablespoons of parsley flakes
1 tablespoon oregeno
1 tablespoon marjoram
1 tablespoon thyme
1 tablespoon crushed rosemary
1 tablesppon celery seed crushed
1 tablespoon ginger
1 teaspoon sage

Makes about 1/3 cup.


FOR MY FAVORITE SALAD MIX
Combine the following ingredients

2 tablespoons parsley flakes
1 tablespoon seasoned salt <I tend to leave this out>
1 tablespoon marjoram
1 tablespoon basil
1 tablespoon dried chives
1 tablespoon dillweed
1 tablespoon celery seed
1 teaspoon Bon Appettit (also known as Beamond spice)
which is a celery, parsley, chive pre-mixture>

Makes about 1/3 cup.

Garlic Sour Sauce

1 cup ketchup OR (1/2 cup ketchu, 1/2 cup barbeque sauce -- garlic flavored>
1/2 cup golden sugar (brown tends to be too sweet)
1/2 cup water
1 package onion soup mix
2 teaspoons ground ginger
2 minced garlic cloves (sometimes 3 depending on the mood !!!!)

I use this sauce in the slow cooker, but also use it for a sauce base for chicken or pork.

Stir ingedients together over medium heat. Bring to a quick boil and pour sauce over meat in oven dish or slow cooker.....
Baste frequently in the oven method -- ensure all piece of meat are coated if using the slow cooker...

This makes enough sauce for 3-4 strips of pork ribs, or 4 small pieces of chicken....
